Mexican Lasagna

I got this recipe from a girl at work. I haven't even tried it yet...It's in the oven cooking but was so easy to make and looked so good while I was making it that I thought I would share it while I had a second.
Grocery List: 1 jar of Ragu Pasta Sauce
1lb of ground beef. (I actually think I used a little more than that)
1 can of whole kernel corn, drained
4 teaspoons of chili powder
6 flour tortillas
and about 2 cups of shredded cheese. (Preheat your oven to 350)

Now time to cook!
Reserve about 1 cup of your Ragu sauce to the side.
Brown your beef ( I added onions), drain, and then add your corn, chili powder, and the rest of your pasta sauce.
In a 13x9 baking dish spread about 1 cup of that mixture on the bottom. Layer two tortillas, then add half of the beef mixture that is left, top with cheese, add two more tortillas. Layer the rest of the beef mixture, a little more cheese and then two more tortillas. Top with your 1 cup of reserve Ragu sauce. Bake for 30 mins. Take out, layer with the rest of your cheese and stick back in the oven until the cheese is bubbling...

Okay, if its not good then I'll let you guys know because like I said, I haven't tried it yet....But it sure does smell good!
ENJOY!

Our bathroom

Aaron's dad is staying with us tonight and everything we showed him we've done to the bathroom or are doing to the bathroom he looks at us with disgust. Oh well, someone with a beard down to their chest probably doesn't have good taste anyways. Maybe that's why Keagan calls him-Grandaddy in the Woods...

Is his name Keagan or Boodro??

Okay, we have hit a new milestone, if you will, with Keagan. Today in both Lowe's and Home Depot Keagan was convinced that he was our dog Boodro. He would only come if you called him by that name and he walked around both stores the entire time on all fours with his tongue hanging out. Some folks passed us by laughing because I guess they thought it was amusing (those must be the people who have also had a 2 year old in their lifetime) and some walked by us like we were totally crazy for letting our son crawl around Lowe's and Home Depot on his hands and knees. Personally, other than the fact that it really slowed us down in our shopping, I found it cute, amusing, and a stress-free break from the never-ending shopping that we're having to do for our bathroom.

Welcome to March

WOW! What a loud entrance March made!!! Yet again they were calling for snow here but we never really believed we were going to get any. Last time they called for it here we woke up to not even a sight of white anywhere. So at last, last night the long awaited snow arrived. It started snowing around 5:30. Of course we went out and played some but mainly we sat under our carport in amazement at the size of the snowflakes and at the rate they were coming down. By the time we went to bed we were up about 4.5 inches. Morning comes and I could tell that there must have still been snow on the ground because it looked like daylight coming from the blinds it was so bright. Took one look out the window and WOW....It was everywhere! I think total we got about 6-6.5 inches on the ground! Of course all schools, daycares, and a lot of jobs were closed for a big fun SNOW DAY! Sometime during the night the temp slipped from 36 degrees to a bone chilling 25 degrees so the roads were a mess. We were watching CNN Headline news and they were reporting from our very own exit we take to get home. Miles and miles of 18 wheelers were stuck on the interstate not able to make it up the hill due to ice. They said there had been upward of 300 wrecks overnight and warned that if you decided to drive that you were taking it into your own hands. If you wrecked it would probably take hours for rescue squads to get to you. So of course there was no driving. We did however have to take a walk to the store. We didn't prepare for this snow we knew that we weren't going to get so of course we were out of milk, dog food, breakfast items....All sorts of must haves....so off we went on our mile and a half trek there and then a mile and a half back. I was starting to think we were crazy for walking but we passed 2 other couples doing the same thing!! It was crazy! Once we got back we treated ourselves to a little steak and eggs on the grill and then headed inside where it was nice and toasty. We've ventured out some throughout the day today to go play in the snow but mostly have viewed it from afar. I love it while its here. And I love a really good snow once every year or so but then I'm ready to get back to nice warm weather. I hope this was Old Man Winters last little hoopla before spring finally arrives.

Colorful Day

Today has been a day!!! We started out skipping church because we had so much to do and headed to Lowe's at 8:40am. We had a list of things that we needed to get for the bathroom but we never imagined that between Lowe's and Home Depot we would be there for 4 hours! I have come to the conclusion that I am not good at this. We bounced back and forth between Lowe's and Home Depot about 4 separate times trying to decide on a vanity top, paint, etc....Finally at 12:30 and absolutely no patience left in my body AT ALL we make our exit with everything in hand. It's all still a work in progress but I think its going to look so good. A while back we bought some beautiful multi-colored slate tile for our floor. We bought a dark rich stain and stained our cabinets and bought a beautiful white marble vanity top. The top color of our wall that we just painted today is called cottage white and then we bought beadboard that we will be painting hopefully tomorrow. The color of that is a gorgeous green called rejuvenate, that catches hints from our slate. And then of course we had to buy a few other detail items like a new faucet, a new shower rod (the curved kind) and well....That may be it for now. Still needed is a new mirror and lighting system. I had no patience left to go through picking out those today though..... Keagan in all of this was really good. He tested me a few times but what can you expect from an almost 3 year old in a hardware store for that long. I think we only made like 6 trips to the potty with him....lol. :) And when we got home and he saw us painting he wanted to paint a picture himself. So seen above is the masterpiece that he made for his Daddy. Hopefully we'll be done with this bathroom soon and I'll have pictures of it to post. (Fingers crossed!)

Growing Old

So I had a moment at Denny's today...A moment that hit me like a ton of bricks and then wouldn't go away. Aaron, Keagan, and I decided to head to Denny's for their famous $2.99 Grand Slam breakfast. Can't go wrong with that price! We were just about done with breakfast and Aaron was off taking Keagan to the bathroom when I noticed this little old woman. She was sitting at a table by herself but all the servers seemed to know her. She must be a regular. I was daydreaming a little and actually amusing myself on how I really don't mind growing old. I started wondering what I am going to be like. Am I going to be a sweet little old lady that all the servers come talk to....With that thought I started thinking of my family. My grandparents...Nana, one of my grandmas. She is certainly not a sweet welcoming old lady on the outside but she sure is full of love in her own way on the inside. I was wondering if I was going to turn out like her. And then I started thinking of my mom and how she never got the chance to grow old. How she never got the chance to be that little old lady. What would she have been like? It was like a whirlwind of overwhelming thoughts and then I realized that I was crying. I was actually sitting at the table in Denny's with tears running down my face. I look up and here come Aaron and Keagan. Aaron looks at me totally puzzled because only 5 mins. ago I was sitting at the table laughing and now I'm crying. I wiped my tears away and acted as if nothing ever happened. I changed the subject as soon as they got to the table. But something did happen....And its sad. I just hope I get that chance to grow old. I don't dread it! I welcome it. I can't wait to be a grandparent. To have Keagan come over with his wife and kids.... I can't wait.

Pay it Foward

I just got off the phone with my sister in law and I am in complete awe over a conversation that we had. My brother and his family are downsizing and have decided to sell their current home and to move back into one of their smaller rental homes they own. Because they are downsizing in the size of their home they also have to downsize in everything that they are taking to this house. Instead of selling all of their items (which are pretty nice things that the normal person would be very tempted to purchase) or instead of giving everything to Goodwill for Goodwill just to turn around and sell-They are going to have a yard sale. But not just a yard sale. Everything is FREE! When the shopper comes up and ask how much something is, they are going to tell them to just take it and to give it a good home. For some folks, the normal yard sellers, this will just be jackpot....but for others-who are honestly going to yard sales because maybe they've lost their job or have had another family crisis and wonder how they are going to put spring/summer clothes on their child or whatever their case may be....This could be an act from God that they will never forget.
